Here’s our chef Matthew’s take on cheesecake - it’s more delicate that other cheesecakes.
Baked rhubarb cheesecake - for four
Preheat oven to 150 degrees
Ingredients for rhubarb compote
300g rhubarb - chopped into small batons
150g sugar
150ml water
Ingredients for cheesecake
225g cream cheese
225g sour cream
150g caster sugar
2 eggs, separated
Butter for greasing
Method for the rhubarb compote
Bring the water and the sugar to the boil, then turn the heat down, and gently poach the rhubarb in the liquor - it takes about five minutes
Method for the cheesecake
Grease four ramekins with butter and sprinkle some caster sugar inside. Spoon the compote in the bottom of the mould, then place in a bain marie - put to one side, ready for the cheesecake mixture.
Combine the cream cheese with two thirds of the sugar, add the egg yolks and the folder through the sour cream. In a separate bowl, whip the egg whites, then blend the remainder of the sugar into the egg whites to form a soft peak egg white mixture. Next, fold through the cream cheese mixture. Place on top of the rhubarb compote, the pop the bain marie in the centre of the oven. Cook for 25 to 30 minutes. Test with a skewer in the centre of one of the ramekins; if it comes out clean, they are ready!

Dow’s
Since 1798, the name Dow’s has been associated with the finest ports. Dow’s ports are made at two of the most famous quintas in the Douro: Quinta do Bomfim and Quinta da Senhora da Ribeira.
Warre’s
Founded in 1670, Warre’s is the oldest British-owned port house and has remained in the Warre’s family throughout its long history. Some of the best produced ports come from their privately owned vineyards.
Smith Woodhouse
In 1784, Christopher Smith, a wine merchant who later became Lord Mayor of London, opened offices in Oporto to trade in port. The company has maintained its worldwide reputation for producing outstanding ports.
