Founder and owner – Sue Cloke

IMG_3602Sue was part of the amazing buying team that set up the iconic Harvey Nichols Foodmarket in 1992, where she was responsible for the Cheese and Dairy buying, she  was also involved with their Bakery, cook books and promotions. Her first cheese experience was at Paxton and Whitfield, London’s most famous cheese shop  in  Jermyn Street, where she learnt her trade. Having taken a course in Home  Economics in Birmingham, she decided that she wanted to specialise in one food  area,  and it was on a skiing trip to the French Alps, whilst a nanny, that she became  hooked on Alpine cheeses of France. Sue and her team opened Cheese at Leadenhall in 2005.

Sue is an expert on British and European cheeses, especially of the artisan, unpasteurised variety. She will try to answer any cheese- related questions, with minimal fuss, bags of professionalism, and lots of fun.

When she is not being the Duchess of Cheese at Leadenhall (as her team affectionately call her), Sue judges at the British Cheese Awards and the World Cheese Awards, where she has regularly spotted the winner well in advance!

Her Favourite cheese? Comte “…for its nuttiness and complexity” and Tomme de Savoie “ ..because this was the cheese that first got me hooked on good cheese ”

Her Favourite Wine? Chateau du Trignon, Gigondas “…as it has depth, lots of rich, plummy flavours and goes brilliantly with different styles of cheese, plus a lovely reminder of an excellent holiday in the region”

Assistant Manager – Fran

Francesca became involved in the food industry in the early nineties when she ran a franchise of delis. She then went on to manage the cheese counter in Harvey Nichols, working with her colleague Sue Cloke. She has been at Cheese since day one, and has assisted in building the business. Fran – or Super Fran as she’s often called – is unpretentious, often favouring a beer or G&T after working hours.

Favourite cheese: Quickes Mature cheddar… “as you can eat it at anytime, and use in any dish” and Roquefort… “for the strong, salty tang”
Favourite wine: Malbec… “full-bodied, smooth easy-drinking”

Dinner party guests: yet to be confirmed, but we reckon Madonna and Kylie would be on the list, as well as some handsome sports stars!

Head Chef – Simon 

Chef - Simon BarnettOur classically taught chef Simon Barnett is a mild mannered man yet his passion for   food shines through in all that he creates in the Cheese kitchen.

He has many years experience having perfected his skills at Claridges, the London      Marriot, Harvey Nichols Restaurants and Hush. He also opened the Fat Delicatessen  in  Balham, producing delicious food to enjoy both in the Cafe or at home. His style is very influenced by the Continent and hits the perfect note for a hearty yet stylish lunch in the City.

His Favourite Wine? Mulderbosch Chenin Blanc from Stellenbosch, S Africa

His Favouite Cheese?  Vacherin Mont D’or as it’s rich, creamy and mushroomy

Bar Manager – Rob

IMG_0399Rob has been running the wine side of Cheese for over three years now, after  spending many years in all aspects of the bar industry. From humble beginnings  honing his palate as a Mixologist in various cocktail bars throughout London he made  the natural side-step into the wine trade. With a highly trained palate and a love of all  wines, he has helped keep our wine list packed full of regional varietal classics  alongside the more unusual and hard-to-find gems that Cheese has built a reputation  for. And, of course, most importantly, they all match perfectly with cheese! Aside  from the “arduous” task of sourcing the wines for the list, Rob is a judge for both the Sommelier Wine Awards and the International Wine Challenge.

His Favourite Wine?? “It is hard to choose a favourite from the menagerie of styles, colours and grapes, but, if pressed, I would have to say my favourite would be what I’ve currently got in my glass!”

His Favourite Match? Casa Valduga Cabernet Franc from Brazil…”It is by far the most versatile, I am yet to find a cheese that it doesn’t match with!”

Dream Dinner Party Guests? Stephen Fry, Bill Bailey, Douglas Adams, David Niven, Aretha Franklin & Lord Byron.

 Barman – Harry

IMG_3593Harry has served food and drink in three continents for more than 20 years. He  has  worked the full gamut – from chucking out drunken punters in a flea-pit in  Hong  Kong to serving champagne to the rich an famous in LA… With the past  ownership  of a strip club in Watford thrown into the mix, it is safe to say Harry  has lived, and  continues to live life to the maximum degree of excitement and  happiness!

His Favourite Red Wine?  Pinotage

His Favourite White Wine? New Zealand Sauvignon Blanc

His Favourite Cheese? Isle of Wight Blue

Dream Dinner Party Guests? Arsene Wenger as Guest of Honour, with Goldie Hawn and Jeremy Clarkson and his beautiful wife cooking the food. Harry, of course, would sort out the cheese and wine.

Waitress – Federica

Fedi joined the team in July 2016, having been involved in the wine and cheese industry for years. These years of experience were gained not only here in the UK, but also back home in her native Italy. Fedi says that her passions in life are wine and music, and without the pairing of a good wine with even better music, life would be far less enjoyable!
